Dashi is a family of stocks used in Japanese cuisine. It serves as the foundational base for various dishes, including miso soup, clear broth soups, and noodle broth soups.

The primary purpose of dashi is to accentuate the savory flavor known as umami in simmering liquids. Additionally, it is mixed into the flour base of certain grilled foods, such as okonomiyaki and takoyaki.
