Mauby (also known as madi, maví, mobi, mabi, and maubi) is a bark-based beverage that is grown and widely consumed throughout the Caribbean. The drink is primarily produced using the bark and/or fruit of certain species within the genus Colubrina, specifically Colubrina elliptica and Colubrina arborescens. These small trees are native to south Florida and the northern Caribbean.
The production of Mauby typically involves combining the tree components with sugar and various other ingredients, such as aniseed spice. While the beverage was traditionally prepared in small batches as a fermented drink, it is now predominantly manufactured and sold as a commercial non-fermented soft drink.
